Organic Recipes from Miss Dixie and Friends

With just a few ingredients, you can easily bake something special that will surpass any ready-prepared product. Always select the best quality ingredients you can find, organic if possible. The quality of the ingredients you use will be apparent in your baking and make your efforts worthwhile. Cooking is about testing what works best for you, so recipes can be altered to your taste. Most recipes will still work with ingredients you substitute.

Adding fruit to Miss Dixie's original or spice muffin mix is the easiest way to add flavor and goodness to your baking. Blueberries, blackberries, cranberries and raisins are all good choices. Just fold in just before spooning into the muffin pan or cups. For more tasty ideas, consider adding peaches, apples or nuts.

Brownies become tastier when you add nuts to them. Miss Dixie's Brownies' with Walnuts are ready for your mixing bowl right out of the box. Other popular nuts are shaved almonds, pecans and even sunflower seeds.

Grains are at the base of the food pyramid and are considered to be the basis of a healthy diet, contributing enormously to our physical and emotional well-being. Our mixes make eating grains fun and easy. All the mixes are versatile. We have provided recipe suggestions here, but don't be afraid to experiment! Berry Spiced Muffins

Ingredients:

1 cup fresh organic berries of your choice
1 package of Miss Dixie's Organics Spice Muffin Mix
3/4 stick of organic butter
1-1/2 cups 2% organic milk
1 organic egg
Orange zest (optional)

 


Miss Dixie's Tips

1. Try cupcake papers as illustrated in photos below
2. Soak dehydrated berries in Kentucky bourbon instead of water before folding into muffin batter


Instructions:
  • Preheat oven to 350 degrees, wag tail in anticipation and get ready to do some baking!
  • In a large mixing bowl, combine 3/4 stick of melted organic butter, 1 organic egg and 1-1/2 cups 2% organic milk. Whisk until mixed.
  • Slowly pour contents of this package into milk mixture while whisking to produce a smooth batter.
  • Spray organic non-stick cooking spray onto a no-stick muffin tin and fill each opening about 2/3 full. The mix makes 12 muffins.
  • Add fresh organic blueberries, blackberries or dehydrated cranberries with some orange zest to each muffin before baking. No need to push fruit down. Muffin will come up!
  • Bake for 15 to 20 minutes. To avoid burning, check often after 15 minutes.
  • Let muffins cool for 10 minutes and enjoy! Now that’s doggone good.
